Beer may be older than bread

At the very least, brewing is astonishingly old. Archaeologists analyzing 13,000-year-old stone mortars at Raqefet Cave in Israel found evidence that Natufian people were producing fermented cereal drinks for ritual feasts. That puts deliberate beer-like brewing before established agriculture.

Ancient beer came with straws

The drinking straw got started long before iced coffee. Eight gold and silver tubes found at Maikop in Russia are believed to be around 5,500 years old and may have been used for communal beer drinking. Built-in strainers helped stop sediment reaching the drinker.

Beer once had its own goddess

Ancient Sumer had Ninkasi, goddess of beer and brewing. The Hymn to Ninkasi, written down around 1800 BCE but probably based on older traditions, describes the brewing process as it praises her. Essentially, people were singing about making beer thousands of years before the first brewery playlist existed.

No, all beers don't technically need hops

Do all beers have hops? No. Modern brewing relies heavily on them, but beer is much older than hopped beer. Earlier brewers flavored their drinks with mixtures of herbs, spices and other botanicals. Hops eventually became dominant because they bring bitterness and aroma while also helping beer keep.

Beer without hops? Medieval brewers would like a word.

Hops are flowers

Those green hop cones on every craft brewery mural? They're the cone-like flowers of the female hop plant. They contain the oils and compounds responsible for much of beer's hop aroma and bitterness - from citrus and tropical fruit to pine, resin and herbal notes.

More IBUs don't automatically mean more bitterness

IBU measures bitterness-related compounds in beer. Your tongue, inconveniently, has other ideas. Malt sweetness, body and overall beer style affect how bitter that number actually tastes. At Pinter, we therefore use descriptive taste tags rather than treating an IBU score as a complete description of the drinking experience.

A stout and a lager can have the same IBU and still taste very different.

Yes, beer is acidic

Finished beer falls on the acidic side of the pH scale. That doesn't mean every beer tastes sour. Acidity is part of beer's overall chemistry and contributes to flavor, fermentation behavior and stability. What your tongue interprets as "sour" is a more complicated question than pH alone.

Sour beer isn't simply “more acidic beer”

A pH meter and your mouth are measuring different things. Perceived sourness is influenced by the concentration and types of acids in a beer as well as residual sweetness and the rest of its flavor profile. So two beers with similar pH levels don't necessarily make you pucker equally hard.

Lager and ale are separated largely by yeast

Calling a beer dark doesn't make it an ale, and calling it pale doesn't make it a lager. Ales are traditionally fermented using Saccharomyces cerevisiae strains, while lagers use Saccharomyces pastorianus, a hybrid adapted to cooler fermentation. Yeast and fermentation are much more revealing than color alone.

Yeast makes the alcohol - and the bubbles

Yeast eats fermentable sugars and creates two rather important things: alcohol and carbon dioxide.

Pinter makes use of that naturally produced CO₂ during conditioning. Keeping the beer consistently cold allows more of the gas produced during fermentation to dissolve into the liquid and build carbonation.

“Cold crash” does not mean freezing your beer

A cold crash involves rapidly chilling beer after fermentation so yeast and other suspended material settle more readily. The result can be a cleaner, clearer pour.

With Pinter, cold crashing is optional. For brewers who prioritize clarity, Pinter experts recommend 34–39°F with the Brewing Dock attached for the first 24–48 hours of conditioning.

“Trub” sounds terrible. It's completely normal

Trub is the brewing sediment made up of spent yeast and other material that drops out of the beer. During a Pinter cold crash, the lower temperature encourages more trub to settle into the Brewing Dock before it's removed. That can reduce the amount of sediment making its way into the final pours.

Cloudy beer isn't automatically bad beer

Beer doesn't need to be crystal clear to be good. Plenty of craft styles are meant to carry haze, and Pinter's fresh beers are unfiltered, so cloudiness can simply come from the ingredients giving a particular beer its character.

Colder beer doesn't always taste better

Serving everything just above freezing isn't the universal route to better beer. Very low temperatures can mute aroma and flavor, particularly in beers with more complex malt, hop or fermentation character.

Important note - Cold conditioning has an important brewing purpose; on the other hand, serving temperature is about getting the best from the finished beer. Different jobs. Different temperatures.

Beer keeps changing after fermentation ends

Fermentation may be finished, but the beer isn't. During conditioning, flavor continues developing and carbon dioxide produced by yeast dissolves into the liquid.

Pinter experts note that longer conditioning can sometimes improve both carbonation and overall flavor, particularly when a refrigerator is running slightly warmer than ideal.

Beer contains more than you might think

One of the more surprising beer nutrition facts is that beer isn’t just water, malt and alcohol in a glass. It also contains small amounts of protein, potassium, magnesium, phosphorus and several B vitamins, including niacin and vitamin B6.

The exact mix varies by beer style and brewing process - another reminder that what goes into a beer does a lot more than create flavor.

Stronger beer isn't always darker beer

A pitch-black stout does not automatically contain more alcohol than a golden IPA. Color is driven mainly by the grains used and how those malts were kilned or roasted. Alcohol strength depends on fermentable sugars and fermentation. That's why you can have a relatively low-ABV dark beer and a deceptively strong pale one.

Never judge an ABV by its color.

The glass really can change the beer

Different beer glasses aren't purely an excuse to own an unreasonable amount of glassware. Shape influences head formation and retention, controls how aromas collect above the beer and changes the way those aromas reach your nose. The foam isn't just for looks

A proper beer head does useful work. Foam carries aromatic compounds, changes the texture of each sip and releases carbonation as the beer is poured and drunk. Your tap water can change how the same beer tastes

Water isn't merely there to make up the volume. Its mineral composition can influence brewing chemistry and how flavors are perceived.
